Oven Baked Loaded Potato Casserole

Servings: 6-8 servings

Ingredients

5 large russet potatoes, peeled and cubed
1 tablespoon olive oil
Salt and pepper to taste
1 cup cooked and crumbled bacon
2 cups shredded cheddar cheese
1/2 cup sour cream
1/4 cup chopped green onions
1/4 cup butter, melted

Directions

Preheat your oven to 400°F (200°C).

In a large bowl, toss the cubed potatoes with olive oil, salt, and pepper until well coated.

Spread the potatoes in a single layer on a baking sheet and bake for 20-25 minutes, or until they are tender and golden brown.

In a large mixing bowl, combine the baked potatoes, crumbled bacon, 1 1/2 cups of cheddar cheese, sour cream, and half of the green onions. Mix until everything is well combined.

Transfer the mixture to a greased 9×13 inch baking dish.
